Independence Day Recipe: Summer Corn Salad


  • 4 cups fresh or frozen corn
  • 1 cup cherry tomatoes, halved
  • 1/3 cup crumbled feta
  • 1/4 cup red onion, finely chopped
  • 1/4 c basil, thinly chopped
  • 3 tbsp olive oil
  • 1 small lemon, juiced
  • sea salt and fresh ground pepper


  1. Toss ingredients in a large bowl, season with salt and pepper to taste. Best served chilled.

Prep Time: 15 min
Yields: 6 servings
