- 4 cups fresh or frozen corn
- 1 cup cherry tomatoes, halved
- 1/3 cup crumbled feta
- 1/4 cup red onion, finely chopped
- 1/4 c basil, thinly chopped
- 3 tbsp olive oil
- 1 small lemon, juiced
- sea salt and fresh ground pepper
- Toss ingredients in a large bowl, season with salt and pepper to taste. Best served chilled.
