Field Goal Guacamole and Touchdown Tortilla Chips

For the Guacamole

Ingredients

3 avocados

2 roma tomatoes

1/2 red onion

1 clove garlic (finely chopped)

1 bunch cilantro (roughly chopped)

1 lime (juiced)

1 jalapeño (seeded and finely chopped)

Salt

Black pepper

Cumin

Directions

  • Seed the tomatoes and dice them. Dice the onion into slightly smaller pieces than the tomato.  Set aside.
  • Remove the pits and mash the avocados. Add the lime juice to help break down the avocado and make it smooth.
  • Mix tomatoes, onion, garlic, cilantro, and jalapeño into the avocado mash. Add salt, pepper, and cumin to taste.
  • Place in an airtight container and refrigerate for at least an hour to allow the flavors to marry.
  • Serve in a chilled bowl and garnish with lime wedges and cilantro leaves.

For the Chips

Ingredients

Premade corn tortillas

Oil for frying (vegetable oil recommended)

1 Tbsp. Seasoned salt

1/2 tsp Cumin

¼ tsp Cayenne Pepper

Directions

  • Fill a pot or skillet with high sides about halfway with oil. Turn the burner to medium heat and wait until the oil reaches a temperature of 350°F.
  • While the oil is heating, cut the tortillas into triangles and mix the salt and spices together.
  • Fry the chips until golden brown, make sure not too add too many chips at a time. This could drop the temperature of the oil and make for soggy chips.
  • Place chips onto a paper towel-lined tray to drain, and sprinkle on spice mixture while the chips are still hot.
  • Serve alongside guacamole.

Little Things that Cost Your Business Big

Little Things that Cost Your Business BigHow little details could cost your company big money.

If you’re trying to run a company, chances are you miss little details from time to time.  While these small expenses or mistakes may not seem important in that moment, over time they can compound and have a huge financial impact on your business.  Here are some of the most common overlooked details business owners should avoid.

Pay stubs

With the rise of direct deposit and programs that make it easy to automatically pay your employees, it’s easy to forget something as little as a pay stub.  However, it is mandatory by law that each employee receive a pay stub with every pay check.  While failure to provide a complete pay stub results in a fine as little as $50, this fine could add up tremendously.  Imagine that you have 15 employees and you forget to give out a pay stubs one payday.  This little mistake could result in a penalty of $750, and that’s just for a first offense.  A subsequent missed pay stub can result in a $100 penalty.

Phone bills

If your company has relied on the same phone service provider for a long time, there’s a good chance you are overpaying on your phone bill.  Invest the time it takes to compare different providers to ensure that you’re getting the most out of your money.  Alternatively, consider exchanging your phone service for a VoIP (Voice Over IP) service, such as Skype, to save some cash.

Office Perks

While offering your employees coffee and tea is often a necessary expense, make sure that you’re buying these supplies in bulk to get the best deal possible.  This means being vigilant about your supply and planning your shopping trips accordingly.  Sent the intern out on the third emergency coffee run this month?  That Starbucks bill is definitely going to add up!

Common Gaps in Auto Insurance

Common Gaps in Auto InsuranceMake sure that you are getting the auto insurance coverage you need.

If you own a car, every state requires you to have some level of auto insurance.  However, these insurance minimums aren’t enough to adequately protect you and can leave you vulnerable.  Learn about the most common gaps in auto insurance and make sure you have all the protection you need.

Transportation Expenses Coverage

If you are in an accident and are unable to drive your vehicle, you might have to rely on a rental car or other transportation service (bus, taxi, etc.).  However, many auto insurance policies don’t provide coverage for these expenses.  If your policy doesn’t cover transportation expenses, that taxi fare might be coming straight from your pocket.

College Student Coverage

Most auto insurance policies provide coverage for you and the family members who live with you.  If you have a child who is going off to college, they might not be covered by your policy.  Students living in college dorms are typically covered by their parents’ insurance, but students staying in off-campus apartments may be excluded.  Check with your insurance provider to ensure that your college student is protected while they’re away.

Original Equipment Manufacturer Coverage

If your luxury or specialty vehicle sustains damage, your car might not be repaired using original manufacturer equipment.  While your insurance policy will cover damages, coverage might not include new, manufacturer specific parts.   For example, if your brand-new BMW needs repairs, then there is a possibility that broken equipment might be replaced using non-BMW, or refurbished BMW parts.

Flood Coverage

Standard auto insurance policies may not cover flood damage to your vehicle.  This means that if your car is damaged during a flood, then the cost of repairs falls on your shoulders.  If you live in a high flood risk area, then talk to your insurance provider and make sure that your car is covered in the event of flooding.

How Do I Choose the Right Home Insurance Deductible?

How Do I Choose the Right Home Insurance Deductible?Maximize your home insurance by choosing the best deductible for you!

Deciding on your home insurance deductible can be a stressful balancing act.  Before starting the process, learn what a deductible is and how it affects you.

In plain words, a deductible is the amount of money you agree to pay out-of-pocket before your home insurance kicks in.  For example, if you have a deductible of $100 and you make a claim for $300, your insurance company will pay $200.

Many insurance companies have a minimum deductible that you must assume.  However, they also offer you the opportunity to balance your deductible against your premium.  This means that the higher deductible that you agree to pay, the lower your annual premium will be.  While increasing your home insurance deductible is a common money-saving strategy, it’s important to know the risks this decision entails.  Many homeowners agree to pay a higher deductible to save money on their premium only to find that they can’t pay their deductible when disaster strikes.  Agreeing to pay a higher deductible than you can afford means you might not receive coverage when you need it.

On the flip side, many homeowners decide on a lower deductible to ensure that they can afford coverage when they need it.  However, if these homeowners consistently avoid filing a claim, they might find themselves losing money by paying their high premium costs.

Ultimately, when choosing the right deductible for you, it’s important to look at your finances and determine what you can afford to pay comfortably.  Please remember that how your deductible affects your premium differs depending on state and local regulations.  Your individual insurance company will also affect the balance between your deductible and premium.
